Oyster Availability/Substitutes

If your chosen oyster farm is unavailable at the time of shipping, we will select a substitute oyster for you. That substitute oyster will be as close to your chosen oyster as possible in size, location grown, and flavor. If the oyster farm you select is particularly important to you, please leave a note for us in the comments. The note can read (Please let me know if “insert oyster farm” is unavailable). If we see this note and the oyster you have selected is unavailable, we will contact you to discuss options. Options may include a refund or changing the shipping day (to a day when the farm has dropped off more of their oysters at our facility).

Description

Nonesuch Oyster Farm is based in a nature conservancy in Scarborough, Maine, which benefits from pristine water quality. It's this nutrient-rich, cold water that helps Nonesuch produce oysters of superb flavor and quality.

The unique grassy tones often found in Nonesuch oysters are a direct result of their coastal environment. Surrounded by salt marshes, these oysters benefit from the nutrient-rich runoff that flows into their habitat. The marsh grasses contribute organic matter and an underlying vegetal flavor profile to the oysters. This combination of briny and grassy notes makes Nonesuch oysters a must try.

Our Nonesuch Oysters are available to buy online for overnight shipping or pickup at the SoPo Market and Raw Bar.

John’s Rivers were among the first oysters we offered at SoPo when we opened in March 2020, so it was extra special to see the farm first-hand.
