Our commitment to quality and freshness means that we meticulously pack and prepare every order on the day of shipping. We ship from our location on Holyoke Wharf in Portland, Maine's historic Working Waterfront (416 Commercial St, Holyoke Wharf, Portland, ME).

Once UPS picks up your order, a tracking number will be sent to your email. You can use this number to track your order all the way to your doorstep. When checking out, you can select a delivery date from Tuesday through Friday.

Description

Iron Island Oysters are ruled by the seasons. In late winter and early spring, before the dandelions bloom, our oysters are surprisingly full, with a mild taste, and a sweet finish. In the summertime, when the swallows are racing in and out of the barn and the young ones are trying out their new wings, you'll find them with a full salt taste and a tang that stands out all on its own. In the fall, around about the time that the leaves have fallen and the wind starts to sneak towards the easterly, the salt remains, but you’ll also get a rich, lasting umami flavor, as the oysters fatten for winter. In all seasons, they are full-meated and have good shuckability.
